Rebelle Artisan Bagels is an independently-owned bagel shop and café making everything from scratch in small batches and using traditional techniques. Their bagels are rolled by hand and cold-proofed for 24 hours before boiling and baking. They also make pastries in house, cure and slice their own salmon, and make their own cream cheese spreads.
