Santouka is one of the main top chain ramen shops based all over Japan. This Cambridge location is the first Massachusetts stand-alone location. Until recently, ramen was hard to come by in this area. They are known in part for its shio (salt broth) ramen, with other options being miso, soy sauce and pork cheek ramen. This chain has several locations in California, as well as ones in Edgewater, NJ; Arlington Heights, IL; Bellevue, WA; and Honolulu, HI.
